Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways - martini in one hand - burger in the other - body thoroughly used up, totally worn out and screaming "Whooooooo what a ride!"

OK, so we bought a far larger chicken than strictly necessary for last weekend's Sunday roast, which means that as well as a lovely roast and some sandwiches, we got two other good meals out of the bird. All very tasty and pretty good value.

However, when disposing of the pretty well picked to pieces carcass I got to thinking about what can be done with that.
I know roughly how one woudl make a stock from it (large pan of water, chopped small onion, chopped carrot, handful of fresh chopped herbs, bring to boil and then simmer for 3 hours), but, well, then what?

What can I use the stock for?

How can I make it into a nice soup?

And is there anything I need to do once it's simmered aside from strain it all to strain out the bones and chopped up stuff?

Sure, it's too late for this particular carcass, but just thinking ahead for next time.

(Presumably also works with left over joints of lamb or pork or whatever, although I suspect chicken is better?)
