photoSane, sorted and switched-on guy, enjoying life in Brighton. I run my own small business, perform as a stand-up comic and sing with a gay choir. I live with my partner (who I met on Out many moons ago) and our dog. I'm as likely to be tending the garden as pounding a dance floor, or to be in a suit as in my leathers. Aren't contradictions wonderful?

I'm thinking of trying to cook a shoulder of lamb as a roast on my barbeque, and I wondered if anyone had any advice on the best way to do it? I've got a bbq with a lid, so I can shut the heat in, and the grill is adjustable so I can move the meat in relation to the coals if necessary.

I've got a very fresh shoulder joint and I was thinking of searing the outside over the coals, then moving the meat further away from the coals, shutting the lid and letting it cook for a couple of hours, as the coals slowly burn down.

I've looked online and found a suggestion that pushing metal skewers all the way through will help conduct heat to the centre of the joint - is this a good idea?

Anyone with any experience of this, or who can refer me to a recipe/some instructions?
